Summer is cool because there is little need to "cook" any meals. Instead it is all about fresh raw produce. I have been gorging myself on raw greens from the garden alone (rabbit style) and in healthy salads. Tomatos are AWESOME to eat like apples or thrown into salads. I would like a good raw pizza recipe if anyone has one. Preferably one that uses raw tomatos. Cucumbers, sugar snap peas and BERRIES. I have been gorging myself on berries. It is local season for them around here! YAY! Also, I think that PA peaches are taking up about 75% of my diet right now. I lean over the sink and eat about 10 of them at once. I also cut them into my raw salads. Does anyone else love red russian kale? It is divine. Juicing and smoothying are good for me right now as well. I still have 8 weeks until my due date and my baby is getting some good eats in there.
My new favorite crust:
Coconut Crust (from Jennifer Cornbleet's "Raw Food Made Easy"
yield 3 cups, for one 9 inch pie or tart crust
1 1/2 cups unsweetened shredded dried coconut
1 1/2 raw macadamia nuts or raw walnuts, unsoaked
1/2 teaspoon salt
1/2 cup pitted medjool dates, unsoaked
Place the coconut, nuts, and salt in a food processor and process until coarsely ground. Add the dates and process until the mixture resembles coarse crumbs and begins to stick together.
I use walnuts....way cheaper! And sometimes I even use the smaller, cheaper dates if that's all I have, but in that case I do soak them.
