knitting with double stranded yarn?

I'm confused. I have a pattern to make a tank top with one skein but it says to knit with double stranded yarn. What does this mean exactly?

It means to hold two strands of the yarn together as if they were one strand of yarn and knit like that. You can knit from both ends of the skein at the same time or wind the skein into two smaller balls.

I've been wondering if you can do this. Doesn't the ball twist up as the outside end unwinds?

It works better with some skeins than others! I've done it both successfully and unsuccessfully.
