We are totally strapped right now so I won't be making it to the store for a few dyas. I want to make some muffins and this is what i have:

dried cranberries
white whole wheat flour
eggs
half and half
2 tbs baking powder
organic sugar
canola oil
butter
a tree full of oranges

can anyone tell me if i can make muffins out of those things? i am terrible with baking so i am hesitant to try and throw together a recipe. Thanks in advance.

I would make cranberry orange muffins then, with the juice from oranges and a little zest.

Basic muffin recipe:

2 cups flour (I use White WW)
1/2 cup sugar
1/2 tsp salt
3 tsp baking powder
cranberries (1/2 to a cup)

1 egg
1/3 cup oil
3/4 cup milk (sub orange juice)

stir dry ingredients, and cranberries (1/2 to 1 cup)
beat egg and stir in oil/juice

Orange muffins are really awesome with this recipe. I use the zest from an orange and the juice. If you only want to use up one orange you could get as much juice as possible and fill to the 3/4 mark wtih another liquid, but sounds like it's not a problem if you have a whole tree worth!

stir wet in to dry just untill combined, and bake at 375 for 20-25 minutes. Makes 12 muffins.

This is an awesome basic muffin recipe. Not so sweet. Another good one is using a little less sugar like 1/4 cup, a tsp cinnamon and stir in one diced apple to the dry ingredients, and sub apple juice for milk.

You could probably even cut your sugar to 1/3 cup since you are using sweet orange juice instead of milk, but up to you.

ETA: usually when I add things to muffins I use about 1 cup addition. With cranberries they can be too tart for my kids so I"ll do like 1/2 cup and then maybe a little chopped nuts too, but if you love cranberries you can put more like 1 cup, otherwise it won't have much in each muffin.
