2lbs of organic yellow russian fingerling potatoes

These potatoes just looked so beautiful at the farmers market i bought a whole bunch.
Any suggestions?

I like to steam just untill tender, and plenty of good olive oil, sea salt and pepper

I love using these potatoes for miniature baked or twice-baked potatoes. I saw an appetizer recipe in one of my cookbooks and they called them "Pommes Annette", however further research suggests that's not the real name. Here's a link: http://dataquest.spaces.live.com/blo...FA1!3572.entry

They also make really great potatoes gratin and oven baked fries. I like to toss them lightly in olive oil, grey salt and pepper, then roast them in a hot oven so the fries get really crispy on the outside.

I used to get fingerling potatoes at Costco and we really enjoyed them. Lucky you!

I'd cut them into 1 inch chunks and roast them simply at 375 with garlic powder, rosemary, salt, pepper and olive oil. I love rosemary with potatoes, the "earthiness" of the rosemary and the potatoes compliment each other so well. Now I want potatoes.

I made some last week and I halved them, tossed them with olive oil, a squeeze of lemon juice, sea salt and pepper, many many cloves of crushed garlic and a little Parmesan and baked them @ 375-400 degrees until they were lovely and crispy and golden delicious :::

I roast mine whole. Olive oil, salt, pepper and a 400 degree oven. Yum!!! Have you tried purple fingerlings yet??? Those are our favorites!!!!

This thread came up again and I had to post on what I did with some super delish fingerlings that came my way.

I sliced them thinly and sauteed them in sunflower oil at high heat with fresh garlic, fresh basil, salt and pepper for breakfast with some fresh country eggs, they were so good.

Anyway just another idea. I love fingerlings, purple ones are super good too.
