I love using these potatoes for miniature baked or twice-baked potatoes. I saw an appetizer recipe in one of my cookbooks and they called them "Pommes Annette", however further research suggests that's not the real name. Here's a link:

They also make really great potatoes gratin and oven baked fries. I like to toss them lightly in olive oil, grey salt and pepper, then roast them in a hot oven so the fries get really crispy on the outside.
I used to get fingerling potatoes at Costco and we really enjoyed them. Lucky you!
