Baked Oatmeal Recipe

I couldn't find one in my Nourishing Traditions book, but this would be great to make and eat for days. I am trying to cook more in bulk, so I would really appreciate a yummy recipe.

Does this work for ya? I'd love to cut down on the rapadura, but I haven't felt like messing with wet/dry ingredient conversions.

Baked Oatmeal

Makes 1-9x13 pan


½ cup butter

1 cup rapadura

2 eggs

3 cups oatmeal

2 t baking powder

1 t salt

2 cups milk

1 t vanilla

½ cup toasted pecans

ÂĽ cup raisins

chopped apple or peach (I use three Granny Smiths)

Mix dry ingredients and butter together and pour in
the pan. Mix wet
together and pour over dry ingredients. Mix a bit.

Bake at 350 for 35 minutes.

Enjoy!

Yeah looks good. Do you use soaked oatmeal? If so is it 3 cups of dry oatmeal? How much maple syrup do you think will work?

Well, I haven't made this since I started soaking grains, so I dunno...I'm assuming it would the same though, maybe? I don't know about the syrup either. Like I said, I haven't done any conversions on this yet.

I'm a whole lot of help, huh?

Here's the one I use. In fact we had it for breakfast this morning. Today I put a loads of strawberries in it and used some jam as a sweetner (about 1/2 a cup along with the banana made it plenty sweet). It is hard to go wrong with it! I have used rolled oats when I didn't have oatmeal (and didn't think to run the oat/yogurt mix through the blender ) and it was nice - made a custardy bottom with a nice crust on top).

It seems like any baked oatmeal recipe could be made the night before, and then cooked first thing in the AM. Then the oats would be soaked, right?
