Biscuit recipes?

I'm looking for some good biscuit recipes. I tried Sally Fallons, and they were more like dog biscuits. Well, they were okay when we ate them, but not exactly what I envisioned. They were rock hard by the next day though.

Is is possible to make a TF biscuit that is comparable to a Pilsbury biscuit (so good, but soooooo bad!)?

I haven't had very good luck with a TF type biscuit. I usually end up using the Buttermilk Biscuit recipe from Joy of Cooking. There's a recipe for a "beaten" biscuit in there as well...I'm wondering if maybe you could alter those a bit to be more TF friendly?

I'm struggling with this, too! I've tried soaking the flour and milk and then adding the other ingredients just before cooking, but something isn't coming out right. This method works for scones, but it isn't coming out right for biscuits. I read somewhere recently that the little bit of sugar in scones makes them come out differently...

I make biscuits using sprouted spelt flour, using a standard biscuit recipe. They're not quite as fluffy as they would be with white flour, but they're pretty darn good.

This is my recipe for a soaked flour biscuit: Buttermilk Oat Flour Biscuits. It's a bit dense and cakey. But I have another recipe that's a lot like the packaged biscuits--it is a sourdough biscuit. Let me see if I can find that.
