Squash casserole

Hi Everyone,
I am new to posting here, but have been reading for awhile. I am getting lots and lots of squash from my CSA box these days and am not thrilled with eating it steamed or stir-fried. I did make a soup which was good, but am looking for a TF-type squash casserole recipe. Of course the delicious ones I grew up on contained cream of crap soups and were topped with Ritz crackers.

I like squash sauteed with onions (instead of boiled) in a mix of coconut oil and butter (and sea salt). Then you can eat it straight up, or put it in a baking dish w/ a small amount of shredded cheese and croutons (or bread crumbs with melted butter) on top.

We also grew up eating squash dipped in seasoned flour (I use sprouted) and pan-fried. I have also made it before with an egg wash and panko bread crumbs (can use sprouted toast bread crumbs) - then deep fry in palm oil. My kids think it tastes similar to cheese sticks from Applebees. I served it with tomato sauce. (It reminds me of eggplant parmisan)

Or you can saute like above and freeze.

My aunt likes it sliced up raw in salads but I am not sure of digestibility (sp).

If you diced it and then sauteed, you could add it to lasagna or substitute it for eggplant in recipes.

oh - and you can roast it with a mixture of veggies and a chicken.

Can you tell I had too much zucchini this year, and had to find a way to eat it ??? :

it's good sauteed very little with lots of garlic - so it's still quite crisp - and then put on pizza. Mmmmm

Sliced on a baking pan with butter or olive oil, sprinkled with sea salt and peper and parmesan cheese, broiled til toasty and bubbly.
Shredded up and squeezed, mixed with egg and leftover mashed potato or shredded squeezed raw potato, onion, salt, pepper, fried in fingers or cakes.
Also good on pizza, in thin slices.
