Bone broth simmering ?

So, we have a gas stove top AND oven. I am making some beef broth and did not start early today as I should have. I feel kinda creepy leaving the stove or oven on all night while we sleep since its gas. Anyone know if I can "take a break" turn it off before sleep and start again in the morning? Will it hurt it?

Ok sunshinestarr, I think I'm going to give it a shot unless I hear otherwise in the next bit. Ill let you know in the morning if all is ok...

I used to do this but then I found a roaster oven (like a huge crockpot) on Craig's List for $15. It holds 22 quarts and it's much safer to leave on for long periods.

Yes, you can turn it off and start it up again. In the morning, it's usually still very warm, if not hot.
