Kombucha Question...

Does Kombucha contain small traces of alcohol? I have been wondering about this so It thought I would ask. If it does, why is that?

I don't think so, but am curious to know the answer to that, too.

I think it may have trace amounts, depending on the point of the fermentation. I know sometimes I can catch a little "buzz" off mine, but other times I don't. I am a huge light weight though...

The store bought kind says it has 0.5% alcohol in it. I have assumed that this is because they are adding juice and sealing for a second fermentation to get it really carbonated and that during that last fermentation with the juice, the juice becomes alcohol. Like Bensmommy, I have found that my home brew doesn't seem to have alcohol in it, but occationally I detect a hint of something. I don't do a second fermentation at all and I don't add juice until I'm ready to drink it. I did add juice once to a completed kombucha that I was going to stick in the fridge to stop fermentation and it still started turning to alcohol.
