How long will sauerkraut keep in fridge?

I just made a large-ish batch of sauerkraut and stuck it in mason jars in my fridge. Any thoughts on how long will it keep there?

I'm so glad you asked this question! I came to ask the same question about pickles but got sidetracked.

I made a HUGE bucket of pickles following Sandor's recipe if WF. After they're done, I'm going to put them in jars in the fridge like he says to. Problem is, I have another HUGE cloth shopping bag PACKED with more cukes that will fill another 2 buckets. I'm using whole cukes this time, the small pickling ones. I can't wait. Just need to figure out the storage thing & I wonder how long they'll last...I'm gonna email him.

Cool! Let me know what he says when he gets back to you. I used the Angelica Kitchen ruby kraut recipe, with assistance from Sandor's site.

The longest I have had my kraut in the fridge is 6 months. It was still really good.

According to my readings, it takes 6 months for it to fully mature, so I'm assuming it'll keep much longer than 6 months. I'm hoping so, 'cause I've got a whole mess in my fridge for winter. I think as long as it doesn't have white soapy scum forming on top, it's OK.

Can't I just scrape off the white soapy scum? That's what I did when it was fermenting in the crock. Does that mean I should throw it away? (I thought that Sandor said the scum wasn't a deal-breaker...)

I haven't read Sandor's book. I'm just going by my grandmother's advice and what my family's always done...

Definitely don't trash anything until you've gotten more input. I, myself, would be curious to hear other people's advice.
