I got a great deal on some grass fed arm and chuck roasts (<$1/lb.!!!), so I bought 15 of them. Now I need to figure out some new ways to cook with them, usually i do taco meat or pot roast. But I know we'll get tired of eating those 4+ days out of the week. What would you make?

This book feels good in your hands. The paper is heavyweight, and the illustrations flow perfectly.

Here is a favorite Southern Living recipe for "Lime-Cilantro Eye of Round Roast;" I usually make this with a bottom round roast and cook it in the slow cooker on high for 6 hours. It tastes very like the "Barbacoa" beef at Chipotle. It's good!

I slap mine in the crock pot with broth, onions, garlic, and homemade season salt (paprika, sea salt, and garlic powder). This is pretty much always the same. Sometimes I will add sour cream or tomatoes toward the end. These I usually serve over pasta.
Then I vary how I serve it. Sometimes I serve it straight up with tortillas or bread. Sometimes I add peas and rice to the Crock Pot. Or I take out some meat and fry it in Coconut Oil, then serve in sandwiches - Like a Philly Cheese, or in tortillas like Mexican Carnitas, or like a Torta (Mexican sandwich) with refried beans, cheese, and avocadoes.
I try to think of the meat as an ingredient, so I end up with tons of ideas. Think of it as "cooked meat" - then make it into a casserole like Shepherd's Pie. It could even go into chili, if you did not cook it until it shreds...

You can slice it very thin while it's still frozen, marinate it, and make beef jerky!
