Pls help make this muffin recipe more TF

We are a gluten free family (dd has a wheat allergy) and avoid dairy (she seems to be doing okay with butter and goats milk kefir lately...).

I would love to make some gf muffins for my dd (I let her have the gf ones at the local co-op sometimes and she devoures them), but want to avoid using xantham gum &/or guar gum. I've found this recipe that looks promising, but would like use a substitute for the dark brown sugar - maybe maple syrup, honey or molasses or some other sweetner that is more TF if possible. What would the conversion be?

BTW, I'm going to substitute blueberries for the chocolate chips and use coconut milk instead of dairy. Does this look like a good TF recipe in general?

I know coconut flour absorbs a lot of liquid, so if you upped the ratio of that I would think swapping sugar with a liquid sweetener probably wouldn't be a problem. Also you could sub with rapadura. We make a lot of nut flour muffins and most of the time I just use a small amount of honey or a mashed banana to sweeten them up.

I have found that grain free baking tends to be more TF than the gluten free recipes.

It looks like a great recipe to me . Where do you get chestnut flour?

The recipe looks pretty good to me. I don't think you'll need to change much. I know coconut doesn't need to be soaked, but don't know about chestnut flour. I probably wouldn't bother. You could use coconut oil instead of the butter, or you could use the butter. One of the comments mentions soaking, so if you want to soak, you could do what she did (only I would use you goat milk kefir instead of the rice milk). Well, and I'd add the baking powder and baking soda in the morning. Personally, I'd use honey as the sweetener, but that's just me.

Sounds like this will make some really nice blueberry muffins! Let me know how they work out. I've never tried chestnut flour, but I've thought about it. Now that I know it's available locally, maybe we will!

ChristieB: I'm finally going to bake some muffins today - I won't worry about soaking the chestnut flour this time . I'm going to sweeten it up with a banana and honey. I'll let you know how they turn out.
