Apples!?

So I just hand-picked my first apples ever! YUMM!
Anyway, so I have dried a few and eaten a few, but now i want to make apple sauce. Can you make raw apple sauce and does it freeze well? I have a lot of apples and want to make sure that I don't have to eat it all in one sitting !

I've never made it raw, I've always peeled and cored the apples then simmered them on the stove, but that version has always froze pretty well. I'm not sure how you'd make them saucy while still being raw. Now you've got me really curious, I'll be anxious for other replies.

I was just thinking I would blend them really well with some lemon juice?

IME apples break down a bit when frozen and then thawed. I've only ever used previously frozen apples in desserts where it is ok for them to be smooshy, they just don't hold they shape. Kind of like tomatoes.

As an experiment I'd try chopping your apples as small as you can, freeze them, then thaw them. Put them through a mill or in the food processor and then add your seasonings. It won't taste like cooked apple sauce but I bet it would still be good. If you like the texture do some more!

Yes, to all of the above I just defrosted some raw apple sauce & YUCK! The texture was very watery & gritty, if that makes sense. I would try chopping small like PP said. I guess the applesauce I defrosted could have been used for smoothies, but, I unfortunately just thought of that. I threw it out the other day. Oops!

Mmm... my favorite thing to make with apples is apple butter. :

I make raw applesauce to use right away (especially in the applesauce cake recipie floating around here somewhere). I just core them and put them through the food processor and shred them then in the blender to puree them.

Making (cooked) applesauce is easy. Just peel and core and cook. I quarter them before cooking. Just a little water on the bottom of the pan to keep them from burning. I start cooking the first couple that I quarter, then I continue to add raw apples to the pot as I finish peeling and quartering them. Add sugar and cinnamon to taste. Freezes fine.
