I have a bunch of green tomatoes from my CSA and I'd like to LF them. I didn't have any whey for the latin american sauerkraut and ginger carrots I made so I did the double sea salt thing and they are way too salty. I think the tomatoes will redden if I wait and order the pimma culture to use whey. Anyone have any alternative sources?

I'm not experienced in Lf veggies at this point but if you have some milk to spare you could make a quick queso fresco and use the resulting whey from that, I think. That's the fastest thing I can think of.
Or, make some yogurt and drain the whey from it - if you ferment it overnight, the tomatoes will still be green tomorrow. Then you'll have your LF tomatoes and some yummy yogurt cheese too!
