Deceptively Delicious by Jessica Seinfeld

I checked this out at the library and I love the concept, but almost every recipe seems to use white and /or brown sugar. My son can't have sugar, and other than xylitol and barley malt syrup, he goes bonkers from all the other stuff - haven't tried stevia, but that definitely needs special recipes

Many of her recipes also call for many forms of dairy. My daughter can eat some cheeses, but no other dairy. I know I can sub some of it with tofu and other soy products

Anyone familiar or have a general guide for replacing sugars and dairy? Like buttermilk, cream cheese, sour cream, yogurt (plain), skim milk - I know there are a ton of milks out there, but many don't _bake_ well

I've personally found this to be an invaluable resource for dairy-free alternatives.
I can't help with the sugar but I'm interested to find out as well.

DS can't do cane sugar and DD can't do beet sugar or honey, so I've been using tapioca syrup, agave, date sugar, maple sugar, and maple syrup. Frankly, I have to make every recipe 2 or 3 times to get it right. I was using rice milk in a lot of things, but now DS can't have rice, so I either use water or coconut milk. It's a whole lot of trial and error.

I'm not familiar with Jessica Seinfelds book nor am I familiar with replacing sugar in recipes with alternatives. My kids (3 of them) are allergic to dairy and we've had a lot of success with the recipes from Jennifer McCann's Vegan Lunch Box book (she also has a blog with some of her recipes just do a search for Vegan Lunch Box). hth. I don't have any advice for replacing sugar or dairy, but rather how to use puréed fruits and veggies. It's just like making a low fat version of any recipe.
Replace up to ¾ of the shortening, butter, or oil with the puree. I have not read this book, but I would guess that the amount of veggies is less then that. So you can use any recipes that you have already been using.
