sugar equivalency chart?

My ds can't have sugar or most of the artificial crap. Sugar due to a non candida yeast infection in his lymph system and the artificial stuff makes him :

He can tolerate xylitol, barley malt syrup, probably stevia, but I haven't tried it lately, had no success with it when I was doing no sugar for awhile when I was pre mom days.

I need to make waffles, pizza crust, cookies, fruit filled cereal bars w/ all fruit (the only way I can get so fruit/veggy stuff in him)

Our ok grains are spelt, oat, and rye. also, dd is dairy free

It used to be worse though! we lived on meat and veggies for 3 years.

I just want to clarify: you can't use rice and barley? Only spelt, rye and oats?
Excuse me if I'm being dense, I just want to make sure I know what I'm looking for.

Stevia chart (bottom of page)

from cook's thesaurus (nak... online resource)barley malt syrup (Substitute 3/4 cup barley malt syrup for each cup of granulated syrup called for in recipe, then reduce another liquid in the recipe by 1/4 cup.)

I forgot barley, that's a yes, but *no* rice, they both have enlarged rectums, so anything remotely constipating is out, and has tested as such, even long grain wild rice.

Thanks!!! I know I have it in books, but we built a house (we graduated from a trailer to a modular, so happy!) last year and my library has yet to be unearthed

I've looked online, but the internet is soooo full of info now that all kinds of way out there of topic stuff shows up with every search i do it seems.
