Absorbant but not bulky fabric

I have an odd question, well probably not THAT odd...I'm trying to make a seat cover that is waterproof on one side and diapery on the other. I don't want it to be too thick....what, in your opinion, is the most absorbent/least bulky fabric to use?

(Just fyi, I'm also kicking myself for getting rid of my diaper fabric stash last year! Argh!)

Maybe hemp fleece...although I haven't tried it myself so I'm just going by what I've read.
