Where can I learn about Yarn?

Like weights and stuff? I have no idea what the difference between yarn weights mean. Therefore, it's very hit or miss with patterns whether I'll get it to the right size or not. Is there an online resource for this? A book?

And how are you supposed to tell if it's not labeled? My Dad bought me some beautiful yarn from a mill on PEI, but I've got no idea what weight it is, it just came in skeins with no labels or anything.

I'd suggest popping into a yarn shop and asking them to show you the different yarn weights. Think of all the yarn you'll get to fondle......

One thing you can do is Wraps Per Inch. I bought a handy tool from Nancy's Knit Knacks but you can also use a ruler. http://www.heartstringsfiberarts.com/wpi.shtm. Also note the gauge and needle size on patterns. Usually you can tell in general the weight of a yarn by its SPI and needle size.
