Roasted Eggplant and Spinach Muffaletta SandwichI had to seek out this thread to warn you about this sandwich!
I followed the recipe exactly, and used the entire olive 'relish' recipe on the giant sandwich because it said to spread it on generously to both halves---BE WARNED, DON'T do this! I made it through 1/4 a piece of the sandwich but had to stop because it was SO salty. Since I had to buy a lot of the ingredients specially and used 2 sweet peppers, which are pretty expensive right now, I've had to salvage the sandwich by scraping off 95% of the olive 'relish' from both sides to make it edible. Actually, after doing this, it's quite delicious.
I'd really recommend to anyone who wants to this recipe that you halve or even quarter the olive relish recipe and spread it very lightly on the sandwich.
Anyone else tried this recipe?
