make ahead breakfasts

Just looking to get some fresh ideas. I already know I could prep these beforehand:
hard boiled eggs
fruit salad
Cinnamon rolls, quick breads, etc.

I like eggs or some fat and protein for breakfast to keep me full all morning. I should probably make a big batch of breakfast burritos to freeze.

Any other ideas?

I used to make a healthy egg "Mc" Muffin sandwich and froze them. They can be TF, if you make your own English Muffins.

1 english muffin
1 egg
thin-shaved ham (or any meat)
1 slice of cheese - any kind
butter

Toast the english muffin, butter it. Fry an egg, cooked hard (over-done), fry up the meat. Put them both on the EM, add cheese...yum!!

Another idea...

Have a TF english muffing recipe? I can probably find "regular" one and sub sprouted flour?

Yogurt - easy to make yourself and much cheaper than store-bought; I like to add some chopped apples or berries, depending on what's in season, and some crispy nuts and top with cinnamon

Homemade sourdough bagels (same dough as for sourdough bread, but after you shape the bagels and let them rise, you boil them before baking)

Dh likes a breakfast casserole, basically:
leftover stale sourdough bread on the bottom of a casserole dish
top with cheese and perhaps some cooked sausage or bacon if you have it
pour eggs whisked with milk over the top
bake until set
I make a big casserole and then it's easy to reheat individual portions.

Yogurt is a great one

Around here we do smoothies which are made the night before (sometimes two days worth at a time) from yogurt, kefir, fruit, etc. I add coconut oil, an egg, etc. to mine the morning I drink it.

bakes oatmeal too

i love that stuff.. though i haven't had it in ages since i realized i react to oats too.. *sigh*

i use the gardenmommy recipe with coconut oil and milk.

ive made both pancakes and oatmeal on a weekend and heated them up through the week.
eggs in the microwave are super quick too.

In a pinch, you could probably use the Ezekiel sprouted grain English muffins.

Lately, I make omelettes w/ cheese every few days for my husband. I use a ton of CO and about 8 eggs. It lasts him 2-3 days. He likes it because he is very physical, and it keeps him full until lunch. He eats it on sprouted toast w/ butter.

I second the baked oatmeal...

The same sprouted toast (I buy Alvarado) is very satifying with cream cheese, or sometimes cream cheese and jam.

Also, I eat leftovers a lot for breakfast...

Egg custard, egg muffins, quiche, fritatta, are all staples around here. I bake them on the weekend and we eat them all week.

With a little more work in the morning, I can do corned beef hash. I pre-cook the potatoes and the beef on the weekend, chop it all up, then in the morning take a scoop of potatoes and a scoop of meat into a skillet with some CO, heat it for about 2 minutes, crack in an egg, and call it breakfast.

I recently saw these bags online that are parchment and they're like an envelope with an open top. They are sized just right for your toaster and with them you can toast anything without having to worry about ruining your toaster.
If you're making your own bread you could do some french toast and freeze it for toasting as needed. I have thought about this in the past but never done it.

Would you be willing to share your breakfast cookie recipe? This might be perfect for those days the children have no time to eat at home before I have to throw them in the car for their 30 min. drive to school.

This one is yummy! You would have to figure out how to TF it though

BreakFAST Cookies
4 Tbs butter
1/4 cup brown sugar
1/4 cup raw sugar
1/4 cup carrot baby food
1 egg
1 tsp vanilla
1 1/4 cup flour
1/2 tsp soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cup oats
1/2 cup bran flakes
1/3 cup grated carrots
1/3 cup crasins
1/3 cup chopped almonds

Combine the softened butter and sugars, cream baby food and other wet ingredients. Blend until smooth. Add dry ingredients, stirring until well combined. Stir in oats and cereal. Finally add fruits and nuts. Stir this thick and chunky batter until well blended. Scoop rounded mounds onto a cookie sheet- they will not rise or spread.
Bake at 350° for 12 minutes. Store in an air tight container to keep them moist.
Approximately 190 calories in each cookie.

My MIL made some really good grains last night. She did a mix of buckwheat, quinoa and amaranth. I was thinking how good it would be soaked in milk overnight then cooked with maple syrup and butter and salt on top

Baked oatmeal comes to mind.

Honestly, I have just used the regular recipe on the back of the Quaker box, but added more oatmeal and raisins than it calls for. homewithtwinsmama's recipe is probably a lot better.

I usually buy mine. The Ezekial English Muffins from Food for Life. I wish I had a good recipe.
