Brown rice for TF sushi? Help!?!?

My son and I are on a sushi kick, and I want to make my own...

I bought "organic" nori and I have sesame seeds... but I want to use brown rice instead of white...

Is this even an option? Can someone walk me through - Do I need special rice, or is there a technique to make it "sticky"... Do I have to buy one of those pads?

Any other tips, input?

Sure, just get short grain brown rice, soak and cook it normally, and when it's done steaming mix in a bit of rice vinegar (is rice vinegar TF? not sure suddenly) and sucanat (or sweetener you prefer) to the proportions in a regular sushi rice recipe.

I have a bamboo mat somewhere but I haven't seen it in quite a while...the last time I made sushi I did it freehand on a cutting board and it was fine. A little rustic looking maybe but it still tasted yummy! My only other tip would be to not overfill the rolls, it's really easy to do and then they are harder to roll and cut.

Right offhand, I can't think of any cultures that traditionally eat brown rice. My niece-in-law is Japanese, and would be horrified at the idea of brown rice sushi, if that gives you any ideas. They don't eat brown rice in Japan.

when i lived in california there were a few good sushi bars that served brown rice sushi. i make it with brown rice myself, just short grain. i use honey and rice vinegar during the cooking, not after.

I am sure that brown rice is not traditional for sushi, but my body can not handle anything "white" these days!!

Nava Atlas has a recipe for sushi in her "Vegetarian Family Cookbook" that uses both white and brown rice with pointers in there on the whole brown rice thing. It's one of the few cookbooks we still have around from our veg days and I still love it! :0)

But I have to wonder if they ate brown rice a few hundred years ago. Just because there aren't any brown-rice eating cultures NOW isn't necessarily the whole story. There are plenty of cultures that switched from whole wheat flour to refined flour as soon as they had the technology to do so; does that make whole wheat flour "not TF" if it's properly prepared?

We've been using short grain brown rice for sushi for a while now, tastes fantastic! Just mix up your rice vinegar/sugar solution and pour over just like white rice
