i would like to make grassfed ice cream at home. has anyone tried using agave instead of sugar? i'd like to lower the glycemic impact while i'm at it.

should i really get a machine? i was going to try to the rock salt/double bag method.

I've made this recipe with agave instead of honey. I like the honey better, but the agave worked just fine.

If you're making it with just milk, it's not as rich as with the cream, but it still works well.

I do! It's awesome. I do 1 c cream, 1 c milk, 1/2 cup agave, and 2 T vanilla in my ice cream maker. It's REALLY good.

I do, too. I use 2 cups cream, 1 cup milk, 1/2 cup agave, 2 tsp. vanilla. Mix well, chill for about 1 hour (ok, that really depends on how sidetracked I get!), freeze in the ice cream maker. Super yummy!

We make ours in an old fashioned hand crank icecream maker with honey rather than sugar. We just alter the recipe adding about 3/4 cup honey to one cup sugar.

I've got to make some ice cream. I let the summer go by without it.
