favorite cinnamon roll recipe?

: We are not totally GF so nothing like that. I just want something a little more healthy because man am I craving a cinnamon roll!

Well I don't really use a recipe, but I have a basic dough recipe in which I keep a large batch of in the fridge, or freeze in little balls. i just roll it out and spread on whatever butter/sugar/nut mix (I like diced apple, raisin, cinnamon and nuts), roll up and slice and bake at 350 untill just starting to brown.

I try to always have fresh spreadable cheese and just sweeten that for the top

Brioche dough for the base and cream cheese frosting for the topping.

Sorry some things are not meant to be made healthy in my book

I agree- some things aren't meant to be healthy! I'm just looking for something I can get away with without being a total bear to my family afterward while being, um, hormonally challenged today.

This is what I'm making. banana bread is in the oven and I plan smearing the warm slices with nutella and then topping it with vanilla ice cream. The plan was to drizzle on some caramel topping but I'm feeling too lazy to make it.

mmmmmm, well I just made banana bread earlier with the kids..I'll have to run to WF and get some nutella.

before my GF days, i'd make cin. rolls out of sourdough bread dough. just roll out some dough, sprinkle generously with cinnamon and sugar, roll up, stick together in greased pan, bake and enjoy with cream cheese.

mine were all different sizes too because i'm sort of sloppy at rolling out the dough. it turned out to be a feature because sometimes you want a *big* roll and sometimes you just want one that's bite size.

oh, one last thing, when baking them I found that the little ones do better when put in the middle of the pan - they liked to dry out otherwise.

I make a dry batch of no knead bread dough (search here for "innovation in bread" and you can find a looooong thread on it). After first soak/rise, knead in a cup of rapadura, then a cup of not-liquid coconut oil. Add more flour to make workable and roll out. Spread filling over (I use butter, rapadura, pecans) and then roll up. Slice big roll into individual cinnamon rolls. Let rise for two hours or so. Bake .... depends. Half an hour at 350? You can sprinkle more rapadura on before baking or make an icing of some kind. Honey and butter is nice.

I know. I waited til morning and I still can't figure out which one I want to try first. I may make the brioche dough starter and then the no-knead bread as well...

I like to roll a bit of my homemade apple butter in it too-- with lots of good cinnamon and butter- not to forget some yummy walnuts. and then glaze it with some cooked down maple syrup, from my auntys maple trees!!
