Kefir Ice Cream??

Is this possible?

My boys cannot drink milk, but kefir is ok. They miss ice cream.

I was thinking if I put kefir with extra sweetener and some fruit, it would make a decent ice cream.

I have one of those old fashioned ice cream machines.

Any ideas about a recipe? or proportions?

No reason why it shouldn't work.

I'd probably start with a recipe like this one, which uses honey for the sweetener. There's also a maple one on the same site.

I would recommend the cooking process with the eggs (although not with all the kefir... maybe with the sweetener and 1/4 c of kefir), since the eggs are what gives it the smooth texture.

I think it should work.

While I am all for custard ice cream recipes, I have found that fruit ice creams with no eggs are actually creamier and better, IMO.

Let us know how it turns out. I have a ton of kefir in my fridge (from a time when there was extra raw milk available) and the only way it gets used is in smoothies. DH loves ice cream though.

Well I make strawberry buttermilk ice cream all the time. I'll have to find my recipe for amounts....actually if you google it you'll probably get a million recipes for it all about the same. Just use whatever sweetner you want

Mine always turn out icy if I don't use either eggs or a lot of cream.
