(I meant to post this here in "Traditional Foods" but accidentally posted it in "Nutrition and Good Eating." Sorry for the double post--hope no one minds.)

Hello all, I'm new here but excited to find this forum. I've been in the process of making over my diet based largely on Nourishing Traditions. I was planning on making some zucchini bread tomorrow and was going to soak my flour overnight with some sour raw milk I have in the fridge.

It's grassfed, raw cow milk from a certified dairy in Washington state. The expiration date on it is 9/6, so it's 12 days past. It's been in a plastic gallon milk jug in my fridge. I smelled it a few days back and it smelled sour, pretty much what I expected. Just now I prepared to soak the flour and smelled it again and it had progressed quite a bit and smelled pretty bad. I took a sip of it to see how it tasted and rather than being just tart and sour, tangy, it actually tasted quite bitter.

I'm new to using sour raw milk. Is the bitter taste normal? Should I go ahead and do the soaking or is it possible the milk is not good to use? My understanding is that raw milk pretty much is always good, it just gets sour. But this is actually bitter. Should I have had it in an airtight jar or something like that rather than just the plastic milk jug?

Any advice would be much appreciated. Thank you!
