Is white whole wheat flour any good for you? I got the King Arthur brand and paid a lot for it. We're out of sprouted flour and I haven't bought any grains yet to make my own flour. If the white whole wheat is ok when soaked, what grain do I buy to make a white whole wheat flour? Thanks in advance.

I'm not sure what "white" whole wheat flour is. What does it say it's made with? If it's soft white wheat berries, it's essentially pastry flour. If it's hard white wheat berries, it's a type of bread flour (although best mixed with hard red wheat berry flour for good bread results). I always worry about "white" whole wheat flours because there is a real trend to skirt the rules about what is actually "whole" wheat.

There is a white whole wheat that is made from a lighter colored and lighter textured whole wheat berry. Not sure what it's called... I was very skeptical when I first heard of it also.
