You can just do a zig zag stitch along the edge. It won't be as pretty as serged, but it gets the job done and they won't unravel.

anytime i try using the zigzag stitch (which admittedly has only been a few times) i have a really hard time keeping the cloth close enough to the edge but not getting it all caught in the needle and so forth. anyone have any pointers?

You can do the zigzag stitch just inside the edge, and then go back and trim really close to the stitching. Just be sure you don't cut your stitches. Before I had my serger, I would do an overlock stitch on my regular machine and line up the fabric so that one stitch fell just to the outside of the cloth. I never had trouble with threads getting caught though.

Another thought I just had, you could just bind the whole thing in FOE. No serger needed, and no freying.
