Gelatin Question

Whenever I cook a whole roasted chicken I get a lot of yummy rich juices on the bottom of the pan. I don't put anything on the chicken except salt and pepper so I know it is from the chicken. When it is cold it turns into gelatin. Is this the same nourishing gelatin that you are supposed to get when you make broth?
