Quinoa flour bitter? Anyone know?

Please check out this thread if you use quinoa flour.
I'm xposting here because I know there are some mamas here who do use quinoa flour and I know I sometimes don't wander outside of this forum for weeks at a time. So just in case some other mamas are like me, there we go.
I'd like an answer too. I haven't had a chance to use quinoa flour yet (haven't found any), but I'd like to know what to expect if I should find some.

I have quinoa breakfast flakes I made once - yuck. But that was just to try to eat it straight up like malt-o-meal, nothing added. I think I can crush them and use it as quinoa flour. If I do, I can let you know how it turns out!

Well, quinoa flour definately tastes like quinoa if that's the crux of your question. I used it one time and won't use it again. I hate the natural taste of quinoa (but like it flavored in dishes like tabouli) and that's all I could taste in the muffins I made (they were coconut muffins, BTW).

yes it is bitter, it is a strong flavor.

I agree - I can immediately taste the quinoa in whatever I make with the flour! Blech... (but I dislike the taste of it)

Hmm. I actually don't mind it. It grinds down very fine, so it was great for pie crusts. DH haaaaaaaaaaates it. Though he doesn't really like quinoa whole, either. I love quinoa all fluffy with some salt. A little oil. Yum!

I think the problem, perhaps, is that you can rinse and soak the grains very well, but the flour is ground and can't be rinsed. (You'd hope they rinse it before grinding it, but you never know.) You CAN soak your flour and can even add a little vinegar, lemon juice or yogurt while it's soaking, depending on what you can tolerate...

I'm making muffins with quinoa flour now and I have to say that just the smell of the flour makes me want to throw up. DD ate a little batter and LOVES it! Hopefully the muffins will turn out and she will gobble them up.
