Question about Kefir

I've just introduced Kefir into my diet. I'm having a hard time consuming it all before the expiration date.

Does anyone know if you can freeze kefir? I'd like to make popsicles with it but I don't want to kill the good stuff in it. What about yogurt? Does frozen yogurt(self made frozen yogurt) still have the live cultures?

I don't think freezing kills the cultures because I know you can buy frozen cultured veggies and I know you can freeze sourdough starter. It may weaken or lessen the potency though but I'm not sure.

How quickly does it expire - usually cultured products have a pretty long shelf life?

We like these popsicles - use 1/2 cup apple or orange juice, 1/2 cup plain yogurt. Put in jar and shake to mix. Then pour into popsicle molds - yummy!

Thanks for the info. Those popsicles sound yummy! I'll try them with kefir too.

Expiration dates aren't really expiration dates. They are sell-by dates. Many foods, yogurt and kefir in particular, are good for quite some time after the sell-by dates. I have drunk kefir that was two weeks past the sell-by date and it was still good.
