I've had a bottle of this sitting in the pantry just cuz one of the NT recipes called for it but have only used it once...such a waste. Can I make some kind of jello-like snack from it?

I add mine to lots of things that are a sauce or a liquid. I add it to beef stew, to chili. I also add extra gelatin and sea salt to my chicken broth, and then drink it like a tea.
