This is our second week on the diet and it is not that bad but I would love some new ideas. Anyone have meal plans?

We use the www.cookingtf.com menu mailer. It is totally GF/CF with shopping list and prep included....6 dinners, side dishes and even a dessert.

We pretty much cook whatever we used to cook, we just amend the ingredients. I use a couple of great cook books (I'll get the titles for you, but they're not at hand now), and just make the "bread" stuff with their recipes (we are also egg, soy, and pea and tree nut free, on top of other things).

When we cook/saute, we use pure olive oil. When we make mashed potaotes, we use smart balance light and chicken broth instead of butter and milk, and they taste just like the "real thing"...without all the extra fat, too!

Stuff like that. It's just a new way of thinking of things, but once you get used to it...you'll never remember how you did it before!

WE make burgers and meat balls without bread crumbs. Nobody misses them, we saute onions and toss them in the meat before it's formed!

This is the list I consult when wondering what to make, its kind of our stand by list. I've also been getting a lot of new recipes off allrecipes.com

Breakfast

Bacon, eggs & toast (we use Welshire Farms Uncured Bacon)

Pancakes w/ real Maple Syrup (I'm lazy and just use Bobs Red Mill mix)

Pumpkin Pancakes w/ Maple Syrup

Oatmeal (GF oats)

Waffles

Gorilla Munch (GF version of Kix)

Amazon Frosted Flakes

Koala Crisp

Egg McMuffins (English muffin (Kinnikinnick Brand), fried egg, ham or bacon, little margarine and sprinkle the bread with a little cinnamon sugar, I add Swiss cheese to mine)

French Toast (all those bread failures? Use them for bread crumbs, croutons and french toast!)

Sausage, eggs and toast

Rice Porridge (made in the crock pot the night before with margarine, brown sugar, brown rice and dried cranberries)



Lunch (We usually use Toms Celiac Light Bread recipe but are looking for a new recipe since both kids it turns out need an ultra low fat diet due to a metabolic issue)

Turkey Sandwich

Ham Sandwich

Egg Salad Sandwich

Chicken Salad Sandwich

Refried Beans w/ corn chips or Fritos

Chicken Nuggets

Chief Salad

Chicken Soup



Dinner

White bean soup

Lentil Soup

Vegetable Pot Pie Soup

Mafratta (think Subway but its round)

Hamburgers (Ostrich, Bison or Turkey)

BBQ Chicken

Lemon Pepper Chicken

Chicken Taquitoes

Chief Salad

Chicken Gumbo (super easy and fast to make)

Pizza (I gave up the search for a good crust when Whole Foods came out with there 365 brand crust mix, its fantastic!)
