Did anyone watch Andrew Zimmern in Ecuador & Chile last night? Can't remember which country it was, but some of those soups/stews looked SO delicous - like the cow's stomach or the one with the heart. Even the Chile episode with the udder looked yummy. Oh, and in Chile where he ate the eel (that wasn't really an eel, just a white fish) in a curry sauce, that looked heavenly.

I have SOOO many organ meats that I'd like to use in soups/stews. I imagine long, slow cooking & lots of flavors might cover the iron-y taste of some of the meats.

Any recipes?
