Citrons I am not sure I can get but the last recipe I read said to replace with candied orange, mango or papaya. I have oranges so I guess I should candy some ( however that is done ) while I am sourcing an organic beef tongue. Do you reckon a sheep one would do or are they not eaten?
Around here citron is only available at Christmas baking time. You can order it online, or you can candy your own citrus peel... it's not exactly like anything, so I'd probably use a mix of candied citrus (orange, lemon, grapefruit) to approximate the taste.

I don't know of any reason not to eat sheep's tongue. Here in the US sheep is not a commonly eaten meat (lamb yes, sheep no), but in other countries it is. If you can get a similar weight (maybe 2 sheep's tongues instead of 1 beef), I would imagine it would give a similar result. The flavor will be a bit different using sheep products instead of cow, but there's no reason I can think of that it shouldn't work.

I used to just eat lamb until I discovered that hogget & mutton had a lot more flavour. It's had longer to run around in the paddock being a sheep so it appeals to my animal rights side more.
