I would also look to diet as well as doing the (dairy-free) probiotics. Infant eczema is usually caused by a food allergy/intolerance, although many doctors will write it off as being "just eczema". I think that eggs are the most common eczema trigger in babies, along with dairy, soy, and gluten. Check out my blog (link in sig) for more info.
Kirkman Labs has an infant dairy-free probiotic- their Bifido Complex.
Besides diet- we were told daily baths (our allergist told us to use soap, but I think that's stupid because it can dry the skin... so we don't use soap), and a good moisturizer within 3 minutes after patting the skin dry. A lot of moms around here use Vanicream- it's paraben, formaldehyde, perfume, etc. free and nice and creamy. When DD's eczema is really bad (open and oozing) we usually use Aquaphor because everything else seems to sting. When she's really scratching, I will occasionally use a 1% hydrocortisone ointment to avoid her scratching her face open, but I make a point to use that VERY rarely as it can thin the skin.
We are going for our first chiro visit tomorrow, so I will let you know how that goes!
