Gluten Free Dairy Free Food Ideas

So I'm very new to the allergy thing and I have eliminated gluten and dairy from my daughter's diet. She is sleeping a little better and seems a little happier. So anyway, I really need some ideas of foods to feed her. We've been doing lots of fruits and veggies, tried a few different beans and brown rice (she doesn't seem to like these yet), potatoes... So help me with foods that have protein and substance to fill her up. TIA!

Oh yeah, and we live in a very rural area so we are limited to what we buy on a regular basis. No organic or health food store around here. I do stock up on what I can when I go to the city once a month.

Little meat balls mixed with veggies and fried. You could do the same thing and replace the meat with beans. Can she do eggs? Those are a good source of protein. Tinkyada makes an excellent rice pasta in all the usual shapes. You can serve with meat sauce.

A great sweet treat.

3 large ripe bananas, well mashed - about 1 1/2 cups
1 tsp vanilla extract
1/4 cup coconut oil, barely warm - so that it isn't solid
2 cups rolled oats - make sure to get the gluten free kind
2/3 cup almond meal
1/3 cup coconut, finely shredded
1/2 tsp cinnamon
1/2 tsp fine grain sea salt
1 tsp baking powder
6-7 ounces of chocolate chips - I found some at Earth Fare that were gluten and dairy free

Preheat oven to 350

In large bowl combine mashed bananas, vanilla, and coconut oil. Set aside.

In another bowl whisk together oats, almond meal, shredded coconut, cinnamon, salt, and baking powder. Add the dry ingredients to the wet ingredients and stir until combined. Fold in chocolate chips.

Dough will be looser than standard cookie dough, so don't worry.

Drop dollops of dough, about an inch apart onto parchment lined baking sheet.

Bake for 12- 14 minutes.

Makes about 3 dozen bite sized cookies.


**I know some people avoid gluten free oats when they are first start avoiding gluten. But if you can have oats..these cookies are wonderful and I've lived off of them!

ds is now allergic to wheat, so we've been having rice noodles. cause he loves noodles. they are just made out of brown rice and water. we bought them at Trader Joes. I have org. mac and cheese left so we just substitute the wheat noodles for the rice noodles, and then you can replace milk with rice milk or almond milk or something. but there is probably milk in the cheese power so that might not work for you guys. Trader Joes also has wheat free bread, so we can still have sandwhiches! yay!

Aside from our meals which are usually meat & veggies in some form or another, staples around here are:

Hummus
Beans/bean dip
Avocados/guacamole
Nut butters
Yogurt w/fruit or berries
Fresh fruit - we eat a lot of fruit
Dried fruit and frozen fruit
Cheese if you can have it
Bacon or sausages
GF tortillas (the teff are great - rice are ok)
GF bread from TJ's (good toasted w/ jam or pb)
Mary's Gone Crackers

When we're on the go I keep Larabars in my bag, or rice cakes, or cereal bars from Glutino which are quite good but $pendy! When we first went GF I baked a lot (muffins, cornbread, pancakes, etc.) but I don't really bother anymore since I rarely get cravings for it now. I don't have a TJ's here but I also stock up once a month or so when I am near one. Bread, waffles, tortillas freeze nicely.

Thanks for all the great ideas! I can't wait to go stock up now at Whole Foods next time I go into the city. If anyone has anymore to add, keep them coming.

I was just thinking aobut starting a thread about snack ideas.

some things here:
jello- not the fake color junk- but unflavored gelatin made w/ just fruit juice- I bought these little molds that make it funky shapes and he loves it- I believe gelatin is supposed to be a good traditional food.

hard-boiled eggs- or deviled eggs

nori- Luke has always loved sea weed- actually need to order more!

crackers! I made some homemade yesterday- he loved them, but I thought they were terrible- have to work on perfecting the recipes

bean dip- black bean, hummus-, white bean and parsley

carrots

cashews! other nuts and seeds

date balls- dates, coconut, various nuts and seeds mixed in a food processor and roll into a ball!

any dried fruit

both kids (and me love the rice noodles as well- dh eats them without complaint as well)
