Have you heard of this product?

And if so, have you used it? My mom came across it and was hoping she might be able to construct a pumpkin pie for me at Thanksgiving using it. I want to see if anyone has heard about it, used it, anything.

Never heard of it. We could try the unsweetened though (the sweetened has maltodextrin in it, usually corn). I'll have to look for it now!

They carry it at allergygrocer.com and it's one of those products I've been eying but haven't bought yet.

I've tried it--the unsweetened one only, which I confirmed with the company is definitely corn free. I used it for a little while as a source of replacement cream in my coffee. I thought it was okay. Not great, not horrible. I didn't try cooking with it so that would be interesting. If you do try it for pumpkin pie, please let us know how it turns out!

We have only used it to make ice cream and it was just so-so.

I recently made a pumpkin pie with coconut milk and it came out surprisingly well. I added some GF vanilla to sort of cancel out the coconut flavor and that along with the spices really seemed to cover up the coconut. My kiddos loved it. I think that I just used a basic pie recipe--pumpkin, milk, eggs and spice.

It's the egg that gives the pumpkin pie it's texture, so I don't know that the "cream" will make a difference if you can't do eggs. We can't do soy (vegans use tofu in their pumpkin pie usually), and I tried the flax eggs, and it didn't work. We can't use egg replacer (potato starch) or any of the gums, so I think I've given up on pumpkin pie. I did make a pumpkin pie flavored ice cream the other day though, that tasted just like pumpkin pie. And I may try pumpkin cookies one of these days because it's that time of year.

I've never used coconut milk, is it thicker/creamier than rice milk? At this point, we do eggs here and there, so the eggs would still be ok for this treat if I eat it.

KJBrown, is your pumpkin pie flavored ice cream in your recipe blog? I have just gotten a ice cream maker made by cuisinart, and would love to give it a try.

Yep- it's super thick and really rich.
