Hmm... it's an animal, but it doesn't interact with the Fellowship. Shadowfax would have been my first guess, but since Gandalf is part of the Fellowship, there's interaction there...

The Eagles also interact, when collecting Gandalf and later Sam and Frodo from Mount Doom...

The wargs certainly interact, as do the horses of Rohan...

What animal is there that doesn't interact with the Fellowship? Unless the answer meant that it doesn't interact with the Fellowship as a GROUP? Because there are certainly animals that interact with only one or two of the fellowship as individuals...

i did interpret that question as the interacting with the group.
