non toxic furniture finishing?

Hi,
I'm having a bed made for my daughter by a local carpenter. I don't want any toxic finish so I ordered unfinished. Then I don't know how to finish it non toxic way. What can I use? Can I apply non toxic finish after the bed is set up in the room? Or does the finish have to be applied before being set up?

I have used Osmo Polyx hardwax oil for my son's toybox. I would finish it before putting it together if possible, or if you want to finish it after, I would stay out of the room for several days. It is a green product, but does have a smell for a couple of days so I wouldn't want to be hanging out in there right afterward.
