Fold-up knit shopping bag question!

I'm considering making something like this for holiday gifts:

I like the pattern but would rather have knit handles. However, I love that it folds up into itself with that little drawstring. That's an absolute priority, so I want to make sure the bags I make do this. But I got to thinking that maybe I could use the drawstring on a different pattern, one with knit rather than ribbon handles. Do you think it would work? Has anyone tried this?

I made crochet bags last Christmas for my DD's - using Sugar & Cream cotton yarn. I made them much chunkier than the pattern called for, but we love them. I personally prefer to knit, but I think the crochet worked better for the open weave and stretchy-ness of this bag design. I will try to get some pictures soon.

I did the everlasting bagstopper pattern and then made an applied i-cord handle which works fine.
