HELP!! Baking without wheat or nuts!!

Thread Starter
We just found out Ds has a severe nut allergy and mild wheat and milk allergies. I need help making nutritious baked goods.

Where do I look for non-wheat flours? Bob's Red Mill looks good, but their allergy statement says they're made in the same facility with tree nuts!! What about milling my own? Can I just grind up oatmeal?

Anybody buy garbanzo or fava flour?

If you're avoiding wheat, you need to get gluten-free oats (regular oats are cross-contaminated).

There are lots of recipes in the recipes sticky above. You can also google recipes that are gluten-free baking and find lots of good ideas.

A lot of us put together various baking mixes that include rice flours, tapioca starch, potato starch, arrowroot powder, sorghum flours, etc. You can grind your own grains, too. If you google "gluten free baking mixes" you'll find a ton of combinations. The idea is that you don't usually want to replace wheat flour with just one kind of flour (like rice or oat); you want a mixture. And xanthum gum or guar gum is usually necessary in baked goods to replace the gluten in wheat.
