They put friggin' xanthan gum in everything. argh.

I was just thinking about trying gingersnaps one of these days. I just got sorghum syrup which is like molasses (DS can't do cane sugar) and I thought I'd experiment.

Living Without is a great magazine if you're GFCF. If you're anything else, not so great (egg, corn, soy, etc.).

Kathy, can you use guar gum instead?

We weren't able to have it for a long time, but the kids are okay with the So Decadent coconut milk ice cream, which has guar gum, so they're probably okay with it now. They don't get the ice cream very often. I'm just scared to put too much of a new thing into the mix.

they look so good! but yeah, I just found out xantham gum is derived from corn. (I'm still learning!!!) and checked out their recipes. very disappointing that most their recipes are aimed for the gluten free only

I LOATHE xanthan gum. I feel like there are other ways to achieve allergy-friendly cookies, but I'll be damned if I've figured it out yet. And with the xanthan gum available, nobody else seems to want to try.

I can make a freaking awesome buckwheat muffin that's top 10-free, though.

I am new to the corn thing as well and its very disheartening. I need to figure out frosting. I saw that the allergy grocer has corn free confectioner's sugar that is out of stock. I nee to figure out butter too...(was thinking whipped olive oil).

Is buckwheat related to regular wheat?

I've never used xantham gum in any recipes because dd is allergic. The guar gum seems to work fine as a sub (it's a seed, though, in case you have a problem with that).

For frosting, we've used Mrs. Roben's corn-free. We've made it, too, like Jane, but with blended sugar.
