Protein in the am...ideas? - Page 2

I'm a vegetarian, too, and I'm having the same problem. I used to have a nice bowl of whole-milk yogurt and some granola each morning, but sweet things have been making me gag lately, so that's out. I'm not a big egg eater, either, though I do like them in quiches. Last week, I made a veggie quiche and ate that for breakfast a couple of days in a row. Not bad.

It may sound strange, but I also love black beans and rice for breakfast. I stayed in Costa Rica for the summer one year in college and my host family prepared that every day for breakfast. It's actually their national dish-- try googling "gallo pinto" and I'm sure you'll find some recipes. I was just thinking of making a big batch and freezing it in single-serving portions so I can heat it up in the mornings before heading off to work. In CR they usually serve it along with a fried egg or some fruit. DH thinks I'm crazy for eating beans for breakfast, but it really tastes great and fills me up till lunchtime.

This morning I was able to get 32 grams of protein for breakfast!!! I had one cup of yogurt, 1 cup of V8 juice, and a "breakfast burrito mix": 2 eggs scrambled with one tablespoon of butter, 1/2 cup of refried beans, and 2-3 teaspoons of organic salsa. :-) I hate the taste of eggs and the refried beans and salsa covered the taste completely! I also spaced out breakfast over a few hours (from like 5am to 8am) so I didn't have to eat all of that food at once!

PS: I'm kind of lurking here until I get my beta results tomorrow. :

Cheese was my lifesaver with DD.... though not so much first thing in the morning, but I used to get up 1 or 2 times a night and get a slice of cheese or a stick of string cheese and eat it on the way back to bed. Or if I was really hungry I'd make DH get up in the middle of the night and make me Easy Mac (not the least bit organic, but I didn't even pretend to eat healthy while pregnant, I just ate whatever I could tolerate).
