grain grinding for bread making questions

i just got a vitamix : - i am so excited - dh was researching cameras to get me one for my b-day but i found the vita-mix at Costco and called him and he said I could get that instead.
The lady there said I did not need to get the separate grain thing, that this would grind grain just fine. So, I went and got some kamut and red winter wheat berries and amaranth. Do I just toss it in and grind it? I will follow their directions, for the machine, but does it need to be rinsed and dried or anything? I know you rinse the grains if you cook them as cereals, so if you just grind them is that ok? Are some grains better than others?

I don't rinse my grains before grinding them - drying them out again would be a pain. Can't help with the specific questions about them machine - never used one.
One suggestion - weigh your flour when making the bread if you are following a recipe as it will be very full of air and will have a much greater volume than bought flour.
