Does anyone know why this is?

I have to type fast. Crabby toddler today needing attention.

I'm not allergic to corn, I can eat it all day, including corn chips, tostidos, and corn taco shells. I bought some Maseca to make my own tortillas and it makes my face itch and my throat swell a bit. This is the second time it happened, the first time a friend gave me the Maseca and I thought the reaction was from cross contamination (she eats a lot of fish and gave it to me in a used butter container she had used to store other things) so I didn't use it. This package came straight from the store. Why is it I can eat corn chips which are made from the same thing but I can't be around the maseca. The only thing the package lists as ingredients is corn and lime. Lime is a rock. Corn I can eat anywhere else. Can someone explain this?

the only thing i would think to do was call the company to ask about cross contamination or ingredients not being listed. if i remember correctly the law for listing ingredients is only for a certain percent of an ingredient being used.. i could be wrong on that tho.

Do you know that it's lime the rock, vs. lime the citrus?

We do tortilla chips all the time -- usually the organic Tostitos but sometimes other brands. We got the organic Costco brand the other day, and DS reacted to them (rash on his lip and tantrums all day every day since Monday when the rash broke out, and it was the only new food). So maybe there is a certain kind of corn that is being used....

I have heard that there is something called flint corn and then there's another corn. Of course I can't remember which is which, but one of them is supposedly well tolerated while the other is very much not. Wish I could be of more help specifically, but Kathy's post jogged a memory so I thought I'd chime in.
