Birthday Cake

Hi,

Does anyone have any good recipes for an egg, dairy, nut, seed free birthday cake? I am hoping that the other kids at the party would be willing to eat the cake as well. I am absolutely open to a mix. Any suggestions for frosting/icing (etc)? Thanks so much.

Our new family standard came from http://healthy-family.org . She has a carrot cake recipe that is awesome. I have subbed the eggs for egg replacer and bananas. And she has a dairy free frosting recipe to go with it. The recipe shown on the website is for gluten free, but she linked to the original recipe which is made with all purpose flour. Everyone who has tried our cakes have loved them...

google wacky cake and you'll get a really easy recipe (developed during the depression to combat rationing). As long as you're not gluten free, it's an awesome cake that even normal people like. Very moist and delicious. It's chocolate.

Thanks these sound great. Does anyone have a recipe for chocolate frosting? I have spectrum shortening, but am not sure how to flavor it. Can I do something with Enjoy Life chocolate chips??

I've made a number of things from 'Vegan Cupcakes Take Over the World' The recipes in there are so good, they're even better than a lot of the cakes I made with milk and eggs. They taste like traditional cakes and several people commented how exciting it was that DS had outgrown his allergies so he could have good cake like this! I generally use coconut milk instead of soy, rice, etc - the fat seem to help things rise and be lighter in texture. The frostings in there are amazing.

If you want to make a cake from it (they're all cupcake recipes), one recipe makes one 9-inch cake layer. I made the basic golden cake with oreo-"buttercream" frosting for my last big hit.

1/2 cup margarine or shortening
2/3 cup Hersey Special Dark cocoa powder
3 cups powdered sugar
1/3 cup rice milk or soy milk or Coffee Rich (non dairy creamer found in frozen foods section near the Cool Whip)
1 tsp vanilla

Melt margarine if using. Stir cocoa into margarine or shortening. Alt. add powdered sugar and milk sub. Stir. Add vanilla. Stir.

Makes 2 cups of frosting.

Thanks! Do you know if the Hershey's special dark powder is safe for a serious dairy allergy? I'm not sure I've even seen that!

It's been a while since I've called but DS is ana to milk, peanuts and treenuts (egg allergic too) and has had no problems with it.
You can use any safe cocoa powder with this recipe but the Special Dark is really good.
