HELP! milk allergies and lacto-fermentation

I have finally made the mental leap that I NEED to put my family on a TF diet. I'm researching the heck out of it right now.

I see the value in kefir/yogurt etc. But part of my motivation for this is DS1 recent dx of multiple food allergies, including milk. I get that ferments are safer for folks with lactose problems, but what about allergies?

Am I better off with fruit juice kefir and coconut milk yogurt for now? I've already started CLO, and am on the hunt for kombucha. Any one with experience?

There's so much more than kefir & yogurt. Do you have Sandor Katz's Wild Fermentation?
I do my veggie ferments with just salt, no whey - I think whey makes them mushy & gross.
You can get water kefir grains & make coconut kefir.
Kombucha is yummy.

We're also dairy-free (lots of folks here are--great support). We love fermented veggies--there's a great, long thread, the How About a Fermented Veggies thread by Hibou, with all sorts of ideas. I don't add extra salt (as NT recommends for whey-free ferments) and they seem to turn out fine--but that long thread really discusses a lot of things so very well.

Thanks, it's nice to know we can do it without milk.Of course I'd LOVE to reintroduce dairy if Ds outgrows his allergy...but that's another thread.

Keep in mind that if it's the casein in the milk that's the problem you can likely still do butter. Butter is fat only with no protein and casein is a milk protein (I think whey is too?). Also if it's the whey you could probably do cheeses.
Did you have an SPT done to get the dx?

Actually...butter does have casein. Ghee is butter that has had the milk solids removed. Purity Farms ghee is certified casein-free, but ds still can't tolerate it (some people can, some can't).



OP, it's very possible to lacto-ferment without milk. And it's very possible to eat TF with many food allergies. There are many of us here. (And it's so true that coconut milk kefir is soooo yummy!)

We only did the RAST test. Said he's mildly reactive to milk, but wasn't more specific. Once we get his eczema under control, we may look at ghee, etc. That would be nice, I'm a BIG fan of dairy!
