I don`t know any other words to describe it, but when I make really, really dark bread or sourbread, I use Kefir. I use plain kefir when I soak my grains or nuts a la Nourishing Traditions. HFS also have kefir in berry flavors and my boys love it. We buy Helios brand at Whole Foods. Strawberry, peach and raspberry are all yummy! Can you accomplish the souring technique with goat milk? morsan 03-10-2004, 05:32 PM I bet you can use any milk. Goat is used to make yogurt, and since Kefir isn't much different (although it's cultured with grains) the milk should sour up just as well.
