how do you make kefir? Can i make it just like yogurt, by heating milk, adding existing kefir, and leaving it warm for the kefir bacteria to multiply? Or do I need a special starter?

You need to use special kefir grains to get it to work. Bunches of info here:

What's neat about kefir is that you don't need to incubate it like yogurt, you can just leave it out at room temp.
