my husband and I flew to Europe when my son was the same age. I just leaned back and latched him on - no problem. You'll want dh on the side with the feet and hopefully there'll be a couple empty seats in your row. You can ask when you check-in. I've also seen flight attendants rearrange people so those with an infant have a little extra room - be nice to them and let the little one charm them :) !
Does your little one sleep well in the carseat? If there is an empty seat, you can carry it on and let him sleep there. In any event, a plane has a lulling effect similar to a car with the motion and drone.
We actually found eating on the plane to be more of a challege. Those little arms are long and grabby at that age!
Also, we found this to be a great age to travel. He loved all the activity and new faces and was quite content to nap in a sling while we walked here and there.

I reread the OP and realized you may be traveling alone. Don't worry, you can still breastfeed a toddler in an airplane seat, even if you have some one on either side. Charlie and I use what I think of as a modified cradle hold. Instead of being belly to belly, his legs are straddled on the leg opposite the breast he is nursing on. Your neighbor will be a little crowded, but not any more than if you were a man with your knees pushed out (rant: I hate that!). My experience on airplanes has been that people are so relieved the baby isn't screaming that they are happy to overlook an occasional nudge or flash of breast. One other thought: It might be helpful to be sure your carryon fits under the seat in front of you so you can prop up your feet a little.

I flew with my Dd for the first time at about that age. She too would only fall asleep through nursing. So that's what we did. She sat on my lap, and when she fell asleep, she just napped there. If your Dc has their own seat you could nurse her to sleep then maybe transfer her to a carseat. Good luck.
Flying with a toddler was easier then I had first expected. :D just stay flexible and enjoy your trip
